  • 7 oz zucchini, spiralized or julienne
  • 4 cloves garlic (chopped)
  • 2 shallots diced shallots
  • 3 medium tomatoes (diced or halved grape tomatoes)
  • 4 teaspoons extra virgin olive oil
  • Kosher salt and black pepper to taste
  • pinch crushed red pepper flakes to taste
  • 8 oz angel hair pasta wheat or gluten-free
  • 2 tablespoons chopped fresh parsley or basil
  • 0.25 cup low-sodium vegetable or chicken broth

Method
 

Preparation Steps
  1. In a large pot of salted boiling water, cook pasta according to instructions.
  2. While pasta is cooking, in a large saute pan, heat olive oil over medium-high heat. Add garlic and shallots, sauté about 1 minute until soft.
  3. Add zucchini to the pan, season with salt, pepper, and red pepper flakes. Cook about 1.5 minutes, then add tomatoes, parsley, and broth. Stir and cook for another minute.
  4. Remove from heat. Drain pasta, reserve some pasta water, then toss pasta with zucchini and tomato mixture. Add pasta water if needed and serve with grated Parmesan if desired.
