  • 5 pounds chicken wings
  • 1.5 tablespoons baking powder
  • 2 tablespoons vegetable oil
  • 0.5 tablespoons kosher salt
  • 0.5 teaspoons ground black pepper
  • 0.25 cups honey
  • 2 tablespoons low sodium soy sauce
  • 1.5 teaspoons minced garlic
  • 1.5 teaspoons minced ginger
  • 0.25 cups water

Method
 

Preparation Steps
  1. Preheat oven to 250°F and place racks at the lowest and top positions.
  2. Pat the chicken wings dry with paper towels.
  3. In a large bowl or ziplock bag, toss wings with baking powder, salt, and pepper to coat evenly.
  4. Line a baking sheet with foil and set a wire rack inside. Spray with cooking spray.
  5. Arrange wings on the wire rack in a single layer, skin side up, without touching.
  6. Brush or spray wings with vegetable oil.
  7. Bake at 250°F for 30 minutes to render fat.
  8. Increase oven temperature to 400°F and move wings to top rack. Bake for an additional 45-50 minutes until crispy and golden.
  9. While wings bake, prepare the honey soy sauce: bring honey, soy sauce, garlic, ginger, and water to a boil, then simmer until reduced to 1/4 cup.
  10. Once wings are done, toss them in the sauce or serve it on the side.
