Preparation Steps
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish, or line it with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the mashed bananas.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan.
- While the brownies are cooling, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Stir in the strawberry jam until well combined.
- Gradually add the powdered sugar, alternating with the milk, beating until the frosting is smooth and spreadable. Add a drop of red food coloring if desired for a pink hue.
- Once the brownies are completely cooled, spread the strawberry cream cheese frosting evenly over the top.
- Cut the brownies into squares. Top each square with sliced bananas, a dollop of whipped cream, chopped walnuts, and a maraschino cherry, if desired, to create your sundae.
