  • 1 cup milk
  • 1 cup unbleached all purpose flour
  • 1 each ripe banana
  • 2 large eggs
  • 1 teaspoon oil
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup fresh mixed berries
  • 1 large banana (sliced)
  • optional whipped cream and colored sprinkles

Method
 

Preparation Steps
  1. Add milk, flour, banana, eggs, oil, vanilla, baking powder, and salt to a blender and pulse until smooth.
  2. Pour pancake batter into a condiment squeeze bottle or ziplock bag with a cut corner.
  3. Heat a pan to medium-high heat and spray with cooking spray.
  4. Squeeze small dots of batter onto the pan, about the size of a nickel, and cook until bubbles form and tops are dry.
  5. Flip the mini pancakes and cook for an additional 1-2 minutes until golden.
  6. Transfer pancakes to bowls, top with sliced banana, mixed berries, and optional toppings like whipped cream and sprinkles.
