  • 1 tablespoon Cajun or Creole seasoning
  • 24 pounds extra jumbo shrimp, peeled and deveined
  • 6 ounces fully cooked Turkey/Chicken Andouille sausage, sliced
  • 8 ounces medium zucchini, sliced into 1/4-inch half moons
  • 8 ounces medium yellow squash, sliced into 1/4-inch half moons
  • 1 large red bell pepper, thinly sliced
  • 0.25 teaspoon kosher salt
  • 2 tablespoons olive oil

Method
 

Preparation Steps
  1. In a large bowl, combine the Cajun seasoning and shrimp, tossing to coat evenly.
  2. Add the sausage, zucchini, yellow squash, bell peppers, salt, and toss with olive oil.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and cook the sausage mixture for 5 minutes, stirring occasionally.
  4. Add the shrimp to the skillet, cooking for an additional 5-7 minutes until the shrimp are pink and cooked through.
  5. Serve immediately, garnished with fresh herbs if desired.
