  • 2 cups cooked chicken shredded
  • 4 strips bacon cooked and crumbled
  • 8 large flour tortillas
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 0.5 cup chopped onion
  • 0.5 cup chopped bell pepper
  • 1 tablespoon olive oil

Method
 

Preparation Steps
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper and sauté until softened, about 5-7 minutes.
  2. Add the shredded cooked chicken and crumbled bacon to the skillet. Stir to combine with the vegetables.
  3. Lay out four tortillas. Sprinkle half of the cheese over each tortilla, then top with the chicken and bacon mixture, and finally the remaining cheese.
  4. Fold the remaining tortillas in half to create quesadillas. You can also place another tortilla on top and press down.
  5. Wipe the skillet clean and lightly grease it with butter or oil. Cook the quesadillas over medium heat for 3-5 minutes per side, or until golden brown and the cheese is melted.
  6. Slice the quesadillas into wedges and serve hot with your favorite toppings like sour cream, salsa, or guacamole.
