Preparation Steps
- Preheat oven to 350F. Spray a 9 x 13 inch baking dish with olive oil spray.
- In a large skillet, over medium heat, add 1 teaspoon olive oil and garlic and cook for 30 seconds. Add the broccoli, 1/4 teaspoon kosher salt, 1 tablespoon water, and cover. Cook until tender-crisp, about 3 minutes. Transfer to the baking dish.
- Pound the thicker end of each chicken breast to even thickness. Brush mayonnaise on and season with 1/2 teaspoon salt and pepper. Cook in a skillet over medium heat for about 5 minutes per side until cooked through. Cool and slice into bite-sized pieces.
- Reduce heat to medium, melt butter and add remaining olive oil. Cook shallots until tender, about 2-3 minutes. Stir in flour and cook for 1 minute. Whisk in broth, milk, sherry, and season with salt. Bring to a simmer and stir in half of Swiss cheese. Pour half of the sauce over broccoli, add chicken, and cover with remaining sauce.
- Sprinkle remaining Swiss cheese, Parmesan, and breadcrumbs. Spritz with oil and bake for 30 minutes until hot and golden.
