- Marinate the chicken with lime juice, and season with chili powder, salt, pepper, garlic powder and cumin.
- Season vegetables with salt and pepper and toss with olive oil.
- Heat a skillet over medium heat, grill the peppers and onions until tender, about 15 minutes, or cook indoors in a large skillet over 16-18 minutes covered.
- Grill the chicken until cooked through, about 8 minutes per side.
- Transfer the chicken to a cutting board, cut into strips, and combine with the peppers and onions.
- Serve immediately with warmed tortillas, cheese, and optional toppings like sour cream and guacamole.
