- Preheat the oven to 375°F. Mix flour, salt, and pepper. Dredge chicken in flour mixture.
- Sear chicken in a skillet with butter and olive oil until golden, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, melt remaining butter, whisk in flour, and cook for 1-2 minutes. Add onion, garlic, mushrooms, thyme; cook until tender.
- Pour in chicken broth and cream, cook until sauce thickens, 3-4 minutes.
- Arrange chicken in a baking dish, pour sauce over, top with cheese slices.
- Bake at 375°F for 25-30 minutes until cooked through and bubbly. Garnish with parsley if desired.
