  • 2 cups fresh bread crumbs
  • 0.75 cup whole milk
  • 1 lb ground beef 85% lean
  • 1 lb ground pork
  • 2 large eggs
  • 0.5 cup finely minced yellow onion
  • 2 teaspoons minced garlic
  • 2 tablespoons finely chopped fresh basil
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh oregano
  • 1 cup finely shredded Parmesan cheese
  • to taste salt and freshly ground black pepper
  • 0.75 cup olive oil only if using the fried method

Method
 

Preparation Steps
  1. In a large bowl, stir together bread crumbs and milk, adding more milk 1 tablespoon at a time until fully moistened. Let rest for at least 5 minutes.
  2. Add beef, pork, eggs, onion, garlic, basil, parsley, oregano, Parmesan cheese, salt, and pepper to the breadcrumb mixture. Mix gently until all ingredients are evenly combined.
  3. Shape mixture into 1 1/4-inch meatballs, about 38 grams each, with greased hands.
