  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch salt
  • 1 large egg
  • 0.5 cup buttermilk
  • 0.5 cup milk
  • 0.5 cup creamy peanut butter
  • 0.33 cup canola or vegetable oil
  • 2 teaspoons vanilla extract
  • 0.25 cup strawberry jelly

Preparation Steps
  1. Preheat oven to 350°F. Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, sugars, baking soda, baking powder, and salt.
  3. In a separate bowl, beat egg. Add buttermilk, milk, peanut butter, oil, and vanilla; mix well.
  4. Pour wet ingredients into dry ingredients. Fold gently until just combined; do not overmix.
  5. Spoon about one-third of batter into each muffin cup. Add a small spoonful of jelly in the center. Cover with remaining batter.
  6. Bake for 20-24 minutes until muffins are golden and spring back when lightly pressed.
  7. Remove muffins from oven, allow to cool in tin for 5 minutes, then transfer to wire rack to cool completely.
