Method
 

Preparation Steps
  1. Preheat oven to 400°F and line baking sheets with parchment paper.
  2. Cream butter, powdered sugar, and almond extract until light and fluffy.
  3. In a separate bowl, whisk together all-purpose flour, almond flour, and salt.
  4. Gradually add dry ingredients to the butter mixture, mixing until combined.
  5. Form dough into 1-inch balls. Roll in powdered sugar and place on baking sheets.
  6. Bake for 11-13 minutes until edges are golden.
  7. Cool cookies for 5 minutes, then roll in powdered sugar again.
  8. Allow to cool completely on wire racks. Dust with additional powdered sugar if desired.
