  • 12 oz spaghetti
  • 4 oz pancetta diced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1 tsp black pepper

Method
 

Preparation Steps
  1. Cook spaghetti in boiling salted water until al dente, about 10 minutes. Reserve 1 cup of pasta water and drain.
  2. In a large skillet, cook pancetta over medium heat until crispy, about 5 minutes.
  3. In a bowl, whisk eggs, Parmesan, and black pepper together.
  4. Add cooked spaghetti to the skillet with pancetta. Remove from heat.
  5. Quickly pour egg mixture over spaghetti, tossing constantly to create a creamy sauce. Add reserved pasta water if needed.
