Method
 

Preparation Steps
  1. Preheat oven to 350°F. Grease and flour a 9x13 inch baking dish.
  2. In a large bowl, beat eggs and sugar until light and fluffy, about 5-7 minutes.
  3. Add softened butter, vanilla extract, orange zest, and orange juice. Mix well.
  4. Gradually add flour and mix until just combined. Fold in cranberries.
  5. Pour batter into prepared baking dish and smooth the top.
  6. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving. Garnish with additional orange zest if desired.
