  • 2.5 cups all-purpose flour
  • 0.75 cup confectioners' sugar
  • 0.5 teaspoon kosher salt
  • 12 tablespoons unsalted butter melted
  • 8 ounces cream cheese room temperature
  • 8 tablespoons unsalted butter softened to room temperature
  • 4 cups confectioners' sugar
  • 2 large eggs room temperature
  • 2 large egg yolks
  • 2 tablespoons vanilla extract

Method
 

Preparation Steps
  1. Preheat oven to 350°F and line a 9x13-inch baking dish with parchment paper.
  2. In a large bowl, combine flour, confectioners' sugar, and kosher salt.
  3. Add melted butter to the dry mixture and mix until crumbly. Press firmly into the bottom of the prepared pan.
  4. Bake the crust for 20 minutes. Let cool slightly before adding toppings.
  5. In a bowl, beat cream cheese, softened butter, confectioners' sugar, eggs, egg yolks, and vanilla until smooth.
  6. Pour the cream cheese mixture over the baked crust and bake for an additional 35-40 minutes until edges are golden and center is slightly jiggly.
  7. Allow the bars to cool at room temperature, then chill in the refrigerator for at least 2 hours before serving.
