  • 16 oz elbow macaroni
  • 4 tablespoons unsalted butter
  • 2.25 cups milk
  • 0.5 cup all-purpose flour
  • 1.25 cups heavy whipping cream
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon dry mustard
  • 2 teaspoons worcestershire
  • 1 pound smoked gouda cheese (shredded)
  • 0.5 pound sharp cheddar cheese (shredded)
  • 5 slices bread about 2 cups crumbs
  • 3 tablespoons butter (melted)
  • 0.5 pound bacon (cooked and crumbled)

Method
 

Preparation Steps
  1. Prepare macaroni according to package directions. Set aside.
  2. In large pot, melt butter over medium high heat. Add milk and bring to near boiling. Reduce heat to medium and sprinkle in flour. Whisk vigorously over medium heat for 1-2 minutes. Mixture should be thick and boiling. Slowly add cream, while whisking. Add salt, pepper, mustard and worcestershire. Reduce heat to low and stir for about 5 minutes.
  3. Shred gouda and cheddar cheeses. Add to the sauce and stir until thoroughly combined.
  4. Add cooked macaroni to cheese mixture. Pour into a greased 13x9 inch baking dish.
  5. Process bread slices into fine crumbs using a food processor. Mix crumbs with melted butter. Sprinkle over macaroni. Top with crumbled bacon.
  6. Bake uncovered in a 375°F oven for 25-30 minutes until golden and bubbly.
