Preparation Steps
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8 minutes. Set aside ½ cup of pasta water before draining.
- While pasta cooks, heat olive oil over medium-high heat. Add minced onion and a pinch of salt, sauté for 4-5 minutes until translucent. Add minced garlic and sauté for 1 minute. Remove from heat.
- In a blender, combine cottage cheese, sautéed onion, garlic, a pinch of salt, and 3 tablespoons of the reserved pasta water. Blend until smooth and bubbly.
- Return drained pasta to the pot. Pour the cottage cheese sauce over the pasta and toss to coat. Heat on low until warmed through.
- Stir in grated parmesan cheese and chopped parsley. Season with additional salt and pepper to taste. Serve immediately.
