  • 0.25 cup olive oil
  • 1.75 pounds boneless skinless chicken breasts pounded to even thickness
  • 2 teaspoons Dijon mustard
  • 0.75 teaspoon kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 0.5 cup dry white wine
  • 3 cloves garlic finely minced
  • 0.5 cup half-and-half
  • 0.25 cup Dijon mustard
  • 0.75 cup finely grated Parmesan cheese
  • 2 teaspoons fresh parsley optional for garnishing

Method
 

Preparation Steps
  1. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts, season with salt, pepper, and sear for 5-7 minutes on each side until golden and cooked through.
  2. Remove chicken from skillet and set aside. To the same skillet, add white wine and garlic, cooking for 1 minute while scraping the bottom.
  3. Stir in half-and-half and Dijon mustard, whisk until combined. Add Parmesan cheese and stir until melted.
  4. Return chicken to the skillet, spoon sauce over it, and simmer for 3-5 minutes to allow flavors to meld. Garnish with parsley if desired.
