  • 2 large boneless skinless chicken breasts
  • 0.5 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 1.5 cups Parmesan cheese finely grated, plus extra for garnish
  • 1.5 cups Panko bread crumbs
  • optional lemon wedges for garnish

Method
 

Preparation Steps
  1. Preheat the air fryer to 400°F. In a shallow dish, combine flour, garlic powder, salt, and black pepper. In a separate bowl, whisk eggs. In another dish, mix Parmesan and Panko breadcrumbs.
  2. Dredge each chicken breast in the flour mixture, then dip into the beaten eggs, and coat with the Parmesan-Panko mixture, pressing to adhere.
  3. Lightly spray the air fryer basket with cooking spray. Place the coated chicken breasts in the basket and spray the tops with cooking spray.
  4. Air fry for 6 minutes, then flip the chicken. Spray with more cooking spray and cook for an additional 5 minutes or until internal temperature reaches 165°F and the coating is crispy.
  5. Remove from air fryer and let rest for 5 minutes. Garnish with extra Parmesan and lemon wedges if desired. Serve immediately.
