Preparation Steps
- Preheat oven to 400°F. Spread bacon on a rimmed baking sheet and bake for 16-18 minutes until crispy. Remove bacon and set aside, letting drain on paper towels.
- Toss chopped potatoes in bacon grease on the same baking sheet, season with salt and pepper, then bake for 20 minutes. Stir and bake another 20 minutes. Stir again, then bake for 15 more minutes.
- While potatoes bake, chop cooked bacon into small pieces. Once potatoes are done, remove from oven, stir and sprinkle with shredded cheese and bacon pieces. Return to oven for 2-3 minutes until cheese melts.
- Remove from oven, sprinkle with sliced green onions, and serve hot. Enjoy!
