Preparation Steps
- Preheat oven to 400°F. Spread bacon slices on a baking sheet and bake for 16-18 minutes until crispy. Remove and drain on paper towels. Chop into small pieces.
- While bacon is baking, toss chopped potatoes with 2-3 tablespoons of bacon grease on a large baking sheet. Season with salt and pepper.
- Bake potatoes for 20 minutes, stir well, then bake an additional 20 minutes. Stir again and bake for another 15 minutes until crispy.
- Remove potatoes from oven. Sprinkle generously with shredded cheese and chopped bacon. Return to oven for 2-3 minutes until cheese melts.
- Top with sliced green onions and serve hot.
