  • 1.5 can (15 oz each) chickpeas drained and rinsed
  • 0.5 cup fresh cilantro packed
  • 0.25 cup red onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 0.5 teaspoon coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 2 tablespoon olive oil for cooking

Method
 

Preparation Steps
  1. In a medium bowl, lightly mash the chickpeas with a fork or potato masher until mostly broken down but some texture remains.
  2. Add the chopped cilantro, red onion, minced garlic, cumin, coriander, salt, and black pepper to the bowl with the mashed chickpeas. Mix well to combine.
  3. Gradually add the all-purpose flour, mixing until a cohesive dough forms. The mixture should be moist but hold together when pressed.
  4. Divide the mixture into 4 equal portions and shape each into a patty, about 1/2 inch thick.
  5. Heat the olive oil in a non-stick skillet over medium heat. Once the oil is shimmering, carefully place the patties in the skillet.
  6. Cook for 4-6 minutes per side, until golden brown and crispy. Transfer the cooked patties to a plate lined with paper towels.
  7. Serve hot.
