  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup powdered sugar
  • 0.5 cup unsalted butter cold and diced
  • 4 large eggs
  • 0.75 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 0.5 cup granulated sugar

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Line a 9x13 inch baking dish with parchment paper.
  2. In a bowl, combine 1.5 cups of flour, 0.5 cups of powdered sugar, and 0.25 cups of diced cold butter. Mix until crumbly and press into the prepared dish. Bake for 15 minutes.
  3. In a separate bowl, whisk together eggs, lemon juice, lemon zest, and 0.5 cups of granulated sugar. Pour over the baked crust.
  4. Bake for an additional 20 minutes or until the filling is set. Allow to cool and dust with additional powdered sugar before serving.
