Adorable Grinch sugar cookies that resemble the iconic snow-capped trees from the movie! These are simple to make and utterly delicious, perfect for holiday celebrations.

Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • neon green food coloring to desired color
For the Glaze & Decoration
  • 1 cup powdered sugar
  • 0.5 teaspoon vanilla extract
  • 1 cup red candy melts

Method
 

Make the Cookies
  1. In a large mixing bowl, cream together the butter and sugar until smooth.
  2. Add the heavy cream, vanilla, and eggs and beat until creamy.
  3. Add flour, baking powder, and salt to the creamed mixture and mix well to form a soft dough.
  4. Add neon green food coloring and mix until the color is even throughout. Add additional food coloring as needed to achieve your desired Grinch green.
  5. Chill the dough in the refrigerator for at least one hour.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Divide the dough in half. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use a Christmas tree-shaped cookie cutter to cut out the dough. Repeat with remaining dough.
  8. Place the cookies on the prepared baking sheets, about an inch apart. Gently shape the top of each tree into a slight curl.
  9. Bake for 7-9 minutes, or until the edges of the cookies just begin to turn golden. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Decorate the Cookies
  1. While the cookies are cooling, prepare the glaze. Mix 1 cup of powdered sugar with 1/2 teaspoon of vanilla extract. If the glaze is too thick, add a tiny bit of milk (about 1/2 teaspoon at a time) until it reaches your desired consistency.
  2. Once the cookies are completely cool, place a small amount of glaze on the top of each tree and along the tips to mimic snow. Let the glaze set.
  3. Melt the red candy melts in a microwave-safe bowl. Heat for 30-second intervals, stirring well between each, until completely melted and smooth.
  4. Pour the melted red candy melts into a small ziplock bag. Snip a tiny corner off the bag to create a piping opening.
  5. Use the piping bag to create small red hearts on the decorated cookies. Allow the hearts to harden before serving.
