  • 2 red bell peppers bell peppers
  • 1 lb Italian chicken sausage
  • 2 tsp olive oil
  • 1 tsp chopped rosemary
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 tsp cracked black pepper

Preparation Steps
  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper or lightly spray with cooking spray.
  2. Cut the potatoes into 1/2 inch cubes, and slice the onions and peppers into strips.
  3. In a large bowl, toss the potatoes, onions, and peppers with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
  4. Spread the seasoned vegetables on the prepared baking sheet in an even layer.
  5. Add the sausages to the baking sheet, arranging them among the vegetables.
  6. Bake for 40 minutes, tossing once halfway through, until the potatoes are crispy and sausages are cooked through.
  7. Serve hot, garnished with additional rosemary if desired.
