  • 2 cups ziti noodles
  • 1 cup sour cream
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 15 ounces corn drained
  • 15 ounces black beans drained and rinsed
  • 2 cups cooked and shredded chicken
  • 2 cups Mexican blend cheese shredded, divided
  • optional green onions diced (for garnish)
  • optional avocado sliced (for garnish)
  • optional tomato diced (for garnish)

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine cooked noodles, sour cream, salsa, cumin, garlic powder, onion powder, corn, black beans, cooked shredded chicken, and 1 cup of shredded cheese. Stir to combine.
  3. Transfer the mixture into the prepared baking dish. Top with remaining cheese. Cover with aluminum foil and bake for 20 minutes.
  4. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
  5. Garnish with diced green onions, sliced avocado, and diced tomato if desired. Serve hot.
