Preparation Steps
- Preheat oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
- In a large mixing bowl, combine cooked noodles, sour cream, salsa, cumin, garlic powder, onion powder, corn, black beans, cooked shredded chicken, and 1 cup of shredded cheese. Stir to combine.
- Transfer the mixture into the prepared baking dish. Top with remaining cheese. Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for an additional 5 minutes until cheese is bubbly.
- Garnish with diced green onions, sliced avocado, and diced tomato if desired. Serve hot.
