  • 15 pitted dates Medjool dates
  • 0.66666666666667 cup unsweetened cocoa powder
  • 1 cup whole roasted unsalted almonds
  • 1 tablespoon honey (or agave if vegan)
  • 2 tablespoons water (or more if needed)
Optional Coating
  • 3 tablespoons confectioners' sugar

Method
 

Preparation Steps
  1. Add almonds to your food processor and pulse until finely ground.
  2. Add the pitted dates, cocoa powder, honey, and water to the food processor. Process until it forms a sticky mass. If the mixture seems too dry, add more water, one teaspoon at a time, until it holds together.
  3. Using slightly damp hands, measure about 1 tablespoon of the mixture and roll it into a ball. Place the balls on a parchment-lined baking sheet.
  4. If using, place the confectioners' sugar in a shallow bowl.
  5. Gently roll each ball in the confectioners' sugar to coat, if desired.
  6. These treats can be stored in an airtight container in the refrigerator for up to a week.
