  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon kosher salt
  • 0.75 cup unsalted butter
  • 1 cup brown sugar
  • 1 large egg room temperature
  • 0.25 cup molasses
  • 4 tablespoons granulated sugar for rolling

Method
 

Preparation Steps
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.
  3. In the bowl of a stand mixer, beat the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg and molasses, scraping down the sides as needed.
  5. Gradually add the dry ingredients to the wet mixture and mix until fully combined.
  6. Shape the dough into 1-inch balls and roll in granulated sugar. Place on lined baking sheet and flatten slightly.
  7. Bake for 8-10 minutes. Let cool on the sheet briefly before transferring to wire racks to cool completely.
