Preparation Steps
- Preheat grill to medium-high heat. Lightly brush zucchini slices with olive oil and season with salt and pepper.
- Grill zucchini for 3-5 minutes per side, or until tender and slightly charred. Remove from grill and let cool slightly.
- While zucchini is grilling, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small bowl for the dressing.
- In a large bowl, combine the grilled zucchini, cherry tomatoes, red onion, chopped parsley, and chopped mint.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle with crumbled feta cheese just before serving.

This salad is best served immediately but can be made a few hours ahead of time. If making ahead, toss with dressing just before serving to prevent the zucchini from becoming too soft.
