  • 1 can crushed pineapple 14oz can, undrained
  • 0.5 cup ketchup
  • 3 tbsp brown sugar
  • 3 tbsp soy sauce
  • 3 tbsp cornstarch
  • 0.5 tsp salt
  • 4 pieces boneless, skinless chicken breasts
  • 1 for garnish green onions (optional)

Method
 

Preparation Steps
  1. Pre-heat the oven to 350°F.
  2. Add pineapple, ketchup, brown sugar, soy sauce, cornstarch, and salt to a small saucepan. Stir, heat to boiling, then reduce heat to low for 2 minutes, stirring frequently. Remove from heat.
  3. Place chicken breasts in a 9x13 inch casserole dish and pour the sauce over the top. Cover with foil.
  4. Bake for 45 minutes or until a meat thermometer reaches 165°F internally.
  5. Top with sliced green onions. Serve over cooked rice if desired.
