  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 0.5 cups light brown sugar (packed)
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • 0.5 cup all-natural creamy peanut butter
  • 2 large Gala apples peeled, grated, moisture removed (~1.25 cups)
  • 1 medium banana mashed (~1/3 cup or applesauce)
  • 2 large eggs
  • 1.5 cups plain unsweetened almond milk
Topping & Mix-ins
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons old-fashioned rolled oats
  • 2 tablespoons creamy peanut butter natural
  • 2 tablespoons light brown sugar

Method
 

Preparation Steps
  1. Preheat oven to 350ºF and line a standard loaf pan with parchment paper.
  2. Prepare the streusel topping by mixing all ingredients into a small bowl until a crumble forms. Set aside.
  3. Combine all of the dry ingredients in a medium-sized bowl. Set aside.
  4. In a large bowl, cream together brown sugar, oil, and vanilla. Add peanut butter, grated apples, and banana. Mix until combined. Add eggs and mix well. Stir in almond milk.
  5. Gradually add dry ingredients to wet mixture, mixing until smooth.
  6. Transfer batter to loaf pan and top with streusel mixture.
  7. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean. Cool for 15-20 minutes before removing from pan.
