  • 12 oz high fiber elbows pasta
  • 1.5 tbsp butter
  • 0.25 cup minced onion
  • 0.25 cup flour
  • 2 cups skim milk
  • 1 cup fat free chicken broth
  • 8 oz reduced-fat sharp cheddar cheese
  • 12 oz fresh broccoli florets
  • 2 tbsp grated parmesan
  • 0.25 cup seasoned bread crumbs
  • 1 can cooking spray

Method
 

Preparation Steps
  1. Cook pasta and broccoli together in a large pot of salted water for about 8 minutes, or until al dente. Drain and spray with cooking spray.
  2. Preheat oven to 375°F. In a large skillet, melt butter over low heat. Add minced onion and cook for 2 minutes. Stir in flour and cook for 1 minute until golden. Gradually whisk in milk and chicken broth, bring to a boil, then simmer for 5 minutes until thickened. Season with salt and pepper.
  3. Remove sauce from heat, stir in cheddar cheese until melted. Mix in cooked pasta and broccoli. Pour mixture into a baking dish. Sprinkle Parmesan and seasoned bread crumbs on top. Spray breadcrumbs with cooking spray.
  4. Bake for 15-20 minutes until golden and bubbly. Serve hot.
