  • 2 large egg
  • 0.25 cups fresh orange juice

Method
 

Preparation Steps
  1. Preheat the oven to 350°F and lightly grease a doughnut pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and ginger.
  3. In another bowl, beat the eggs, then add the grated carrots, vegetable oil, and orange juice.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill the doughnut molds about 2/3 full with batter and bake for 10 minutes or until golden brown.
  6. Allow the doughnuts to cool slightly before glazing with orange glaze.
