  • 1 cup Greek yogurt
  • 2 medium ripe bananas mashed
  • 2 large eggs
  • 2 cups rolled oats
  • 0.25 cup coconut sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • pinch of salt
  • 0.5 cup mini chocolate chips

Method
 

Preparation Steps
  1. Preheat your oven to 400°F. Grease a muffin tin or line with liners and spray with non-stick spray.
  2. In a blender, add Greek yogurt, mashed bananas, eggs, oats, coconut sugar, baking powder, baking soda, and salt. Blend until smooth.
  3. Stir in the mini chocolate chips with a spoon.
  4. Divide the batter evenly into the muffin cups. Top with additional chocolate chips if desired.
  5. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
