  • 1 tbsp olive oil
  • 4 pieces Italian sausage links casings removed
  • 2 cups chopped onions
  • 4 cloves garlic minced
  • 2 tsp oregano
  • 1 tsp red pepper flakes
  • 0.25 tsp salt
  • 2 tbsp tomato paste
  • 1 can diced tomatoes 28 oz
  • 6 cups chicken broth
  • 2 pcs bay leaves
  • 1 cups fusilli pasta uncooked
  • 2 tbsp fresh basil chopped
  • 1 cups ricotta cheese
  • 1 cups mozzarella cheese shredded
  • salt and pepper to taste

Method
 

Preparation Steps
  1. Heat the olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat.
  2. Add chopped onions to the pot and cook until softened, about 7 minutes. Stir in garlic, oregano, red pepper flakes, and salt, cooking for an additional minute.
  3. Stir in tomato paste and cook for 1 minute. Add diced tomatoes with juices, chicken broth, and bay leaves. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
  4. Increase heat to medium-high. Add uncooked pasta and cook until al dente, about 10 minutes. Remove bay leaves.
  5. Stir in chopped basil. Season with salt and pepper to taste.
  6. Serve hot, adding a spoonful of ricotta to each bowl, then topping with shredded mozzarella cheese.
