Preparation Steps
- Heat olive oil over medium-high heat in a medium-sized pot.
- Add turkey sausage meat, breaking it up with a spatula into large chunks. Cook until browned.
- Add minced garlic, sauté for 2-3 minutes, careful not to burn.
- Pour in water and chicken stock, add beans and red pepper flakes, stir thoroughly.
- Reduce heat to low, cover and simmer for 10 minutes.
- Add chopped kale, simmer for another 10 minutes, season with salt and pepper.
- Divide into bowls and serve hot.
