  • 1.75 cups all-purpose flour
  • 0.33 cup granulated sugar
  • 2 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup whole milk
  • 1 large egg
  • 0.25 cup unsweetened applesauce
  • 3 cups granny smith apples peeled, cored and diced into 0.25-0.5 inch pieces
  • for frying canola oil
  • 2.5 cups powdered sugar sifted
  • 1 tablespoon unsalted butter melted and cooled
  • 1 teaspoon vanilla extract
  • 5 tablespoons whole milk start with 5, add more if needed for glaze

Method
 

Preparation Steps
  1. Heat canola oil in a heavy-duty pot or electric fryer to 375°F. Prepare a baking tray with paper towels and a wire rack.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In a small bowl, whisk together milk, egg, and applesauce.
  4. Pour wet ingredients into dry ingredients and stir until just combined; batter should be thick.
  5. Fold in the diced apples evenly.
  6. Once oil reaches temperature, add 1/3 cup batter for each fritter and fry for 1-1.5 minutes per side, until golden brown.
  7. Remove fritters with a slotted spoon, drain on paper towels.
  8. Prepare glaze by whisking powdered sugar, melted butter, vanilla, and milk until smooth; add more milk for desired consistency.
  9. Dip warm fritters into glaze, then set on wire rack to set.
  10. Serve once glaze is hardened and enjoy!
