- Heat canola oil in a heavy-duty pot or electric fryer to 375°F. Prepare a baking tray with paper towels and a wire rack.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a small bowl, whisk together milk, egg, and applesauce.
- Pour wet ingredients into dry ingredients and stir until just combined; batter should be thick.
- Fold in the diced apples evenly.
- Once oil reaches temperature, add 1/3 cup batter for each fritter and fry for 1-1.5 minutes per side, until golden brown.
- Remove fritters with a slotted spoon, drain on paper towels.
- Prepare glaze by whisking powdered sugar, melted butter, vanilla, and milk until smooth; add more milk for desired consistency.
- Dip warm fritters into glaze, then set on wire rack to set.
- Serve once glaze is hardened and enjoy!
