- Preheat oven to 400°F. In a skillet, heat olive oil over medium-high heat. Sear chicken breasts on one side until golden, about 4 minutes.
- Add diced potatoes around the chicken, then season everything with salt and pepper. Continue searing for another 4 minutes, flipping the chicken halfway.
- Top each chicken breast with butter cubes and pour lemon juice over the potatoes and chicken.
- Place the skillet in the oven and bake for 20 minutes, or until the chicken reaches an internal temperature of 165°F and potatoes are tender.
- Garnish with parsley if desired and serve immediately.
