  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon lemon extract
  • 1.75 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 0.5 cup sour cream
  • 2 cups powdered sugar
  • 3 tablespoons lemon juice

Method
 

Preparation Steps
  1. Preheat oven to 400°F.
  2. Add butter and sugar to a large bowl and beat until combined. Mix in eggs, vanilla, and lemon extracts.
  3. In another bowl, combine flour, salt, and baking soda. Gradually add to wet ingredients alternating with sour cream, mix until thick batter forms.
  4. Line a muffin tin with paper cups. Fill each ¾ full with batter. Bake for 20-22 minutes until a toothpick inserted comes out clean. Cool slightly.
  5. Mix powdered sugar and lemon juice to make the glaze. Drizzle over cooled muffins.
