  • 1.5 pound chicken breast
  • 4 tablespoons olive oil
  • 1 tablespoon lime zest
  • 1 tablespoon lime juice
  • 2 cloves garlic thinly sliced
  • 2 tablespoons chopped cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 cup grilled pineapple diced
  • 1 cup grilled sweet corn
  • 1 tablespoon diced jalapeno
  • 0.33 cup diced red bell pepper
  • 0.33 cup diced shallots
  • 1 tablespoon additional lime juice
  • pinch salt

Method
 

Preparation Steps
  1. Preheat your grill to 400°F.
  2. If the chicken breasts are thick, butterfly them and gently pound to about 1/4 inch thickness.
  3. In a Ziploc bag, combine olive oil, lime juice, lime zest, sliced garlic, chopped cilantro, salt, and pepper. Add the chicken and marinate for 20-25 minutes.
  4. While the chicken marinates, prepare the pineapple salsa: dice grilled pineapple, finely dice shallots and jalapeno, and add to a bowl with red bell pepper, corn, lime juice, and a pinch of salt. Mix gently.
  5. Place a sheet of foil on the preheated grill. Place the chicken on the foil and grill for about 3 minutes on each side until cooked through.
  6. Remove the chicken from the grill, transfer to a platter, and top with the pineapple salsa. Garnish with optional crushed peanuts and sliced scallions if desired.
  7. Serve immediately with lime wedges.
