- In a high-powered blender, add the chopped fresh pineapple, granulated sugar, and unsweetened coconut cream.
- Blend for about 3-4 minutes, but do not overmix as it may curdle. The mixture should be smooth and creamy.
- Carefully pour the mixture into popsicle molds. Insert popsicle sticks.
- Freeze for 7-8 hours, or until completely solid.

These popsicles are best enjoyed straight from the freezer. For easier removal, briefly run the outside of the popsicle mold under warm water.
