  • 3 tablespoons olive oil
  • 1 medium yellow onion diced small
  • 1 pound lean ground beef 85% lean
  • 1 medium red bell pepper diced small
  • 3 cloves garlic finely minced
  • 1 each jalapeno finely diced, optional (remove seeds to reduce heat)
  • 4 ounces diced green chiles optional
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried Mexican oregano
  • 28 ounces canned diced tomatoes
  • 32 ounces chicken broth Zoup! Good (Really Good®)
  • 2 cans black beans drained and rinsed
  • 4 ounces tomato paste optional for thicker soup
  • 1.5 cups corn frozen, canned or fresh
  • 3 tablespoons lime juice
  • 0.33 cup cilantro finely minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Method
 

Preparation Steps
  1. In a large heavy-bottomed pot, heat olive oil over medium-high heat. Add diced onion and sauté until translucent, about 3 minutes.
  2. Add ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5 minutes.
  3. Stir in red bell pepper, garlic, jalapeno, green chiles, and cook for 1 minute until fragrant.
  4. Add chili powder, cumin, oregano; stir to combine.
  5. Pour in diced tomatoes, chicken broth, add beans and tomato paste. Bring to a boil.
  6. Reduce heat and simmer uncovered for 10-15 minutes.
  7. Add corn, lime juice, cilantro, salt, and pepper. Stir well and cook for another 2 minutes.
  8. Taste and adjust seasoning as needed. Serve hot garnished with optional toppings.
