  • 0.5 small onion onion finely chopped
  • 1 cloves garlic minced
  • 0.25 cup cilantro chopped
  • 1 tsp olive oil
  • 15.5 oz can pink or red kidney beans undrained
  • 0.5 cup canned tomato sauce
  • 1 medium potato peeled and diced 1/4-inch
  • 1.5 tbsp Sazon seasoning
  • 1 bay leaf bay leaf
  • 0.125 tsp oregano
  • kosher salt to taste
  • black pepper to taste

Method
 

Preparation Steps
  1. In a mini food processor, finely chop the onion, garlic, and cilantro.
  2. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion, garlic, and cilantro. Sauté until softened, about 2 minutes.
  3. Add the undrained beans to the saucepan along with 0.75 cup of water.
  4. Stir in the tomato sauce, diced potato, Sazon seasoning, bay leaf, oregano, and salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the potatoes are tender.
  6. Discard the bay leaf before serving. Serve hot, optionally over rice.
