  • 1.5 cups fresh pineapple diced
  • 5 large scallions chopped
  • 3 cloves garlic minced
  • 1 fresh chili pepper chopped jalapeño
  • 1 tablespoon soy sauce adjust to taste
  • 1 teaspoon fish sauce
  • 1 tablespoon vegetable oil
  • cilantro for garnish

Method
 

Preparation Steps
  1. Cook the rice according to package instructions and set aside to cool.
  2. Heat vegetable oil in a wok or large skillet over high heat.
  3. Add the shrimp and cook until just opaque, about 3-5 minutes, then remove and set aside.
  4. In the same wok, add chopped garlic, jalapeño, and scallions; sauté for 1 minute.
  5. Add the cold cooked rice, pineapple, soy sauce, and fish sauce; stir-fry for 3-4 minutes until heated through.
  6. Return the cooked shrimp to the wok and toss to combine.
  7. Garnish with chopped cilantro and serve hot.
