  • 0.75 cup diced sweet yellow onion
  • 4 ounces can mild diced green chilies
  • 2 teaspoons chili powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3.5 cups mild red enchilada sauce
  • 3 cups shredded rotisserie chicken
  • 8 white corn tortillas cut into strips
  • 2.5 cups shredded cheddar-jack cheese
  • fresh cilantro
  • 1 hass avocado cut into slices

Method
 

Preparation Steps
  1. Preheat oven to 425°F.
  2. Place a large heavy-duty skillet over medium-high heat and add olive oil. When hot, add diced onions and sauté for 2-3 minutes until translucent.
  3. Add green chilies, chili powder, cumin, paprika, garlic powder, salt, and black pepper to the skillet. Stir to combine spices with onions.
  4. Pour in red enchilada sauce and stir to incorporate spices. Add shredded chicken and stir evenly to coat.
  5. Cook sauce and chicken for 3-4 minutes, just until sauce starts to simmer.
  6. Turn off heat. Gently fold in tortilla strips until evenly coated.
  7. Top mixture with shredded cheese. Bake in oven for 10-12 minutes until cheese melts and bubbly.
  8. Garnish with cilantro and avocado slices. Serve warm.
