  • 4 sheets large sheets of foil
  • 1 tbsp olive oil
  • 1 cup white minute rice
  • 1 cup warm water
  • 4 pieces boneless, skinless chicken breasts
  • 1 Red bell pepper sliced
  • 1 Green bell pepper sliced
  • 1 Orange bell pepper sliced
  • 1 Yellow onion sliced
  • 0.25 cup shredded mild cheddar cheese
  • 0.25 cup shredded mozzarella cheese
  • 2 tbsp lime juice
  • 1 avocado sliced avocados
  • 0.5 cup sour cream
  • 0.25 cup cilantro

Method
 

Preparation Steps
  1. Preheat oven to 400°F. Spray foil sheets with cooking spray and set aside.
  2. Prepare rice by combining water and rice, then divide evenly over each foil sheet.
  3. Season chicken breasts with salt, pepper, and an optional fajita seasoning mix. Place over rice.
  4. Arrange peppers and onions around chicken. Drizzle olive oil over all.
  5. Top chicken with shredded cheeses.
  6. Fold foil over chicken to seal packets. Bake for 30-33 minutes until internal temperature reaches 165°F.
  7. Carefully open packets, garnish with lime juice, sliced avocados, sour cream, and cilantro.
