  • 1.5 pound boneless, skinless chicken breasts
  • 1 can diced tomatoes and green chilies (Rotel) undrained
  • 1 can enchilada sauce
  • 4 ounce chopped green chilies
  • 3 cloves garlic minced
  • 1 medium yellow onion chopped
  • 1 can black beans drained and rinsed
  • 2 cans chicken broth 14.5 ounce each
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 bay leaf
  • 10 ounce frozen corn can substitute 2 cans if needed
  • 1 tablespoon chopped cilantro

Method
 

Preparation Steps
  1. Place chicken, Rotel, enchilada sauce, onion, green chilies, and garlic into a slow cooker.
  2. Pour in chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf.
  3. Stir in corn and cilantro.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. An hour before serving, use two forks to shred the chicken in the slow cooker.
  6. Serve with your favorite toppings.
