  • 1.25 cups graham cracker crumbs
  • 0.25 cups butter melted
  • 0.5 cups chopped pecans toasted and divided
  • 8 ounces cream cheese softened
  • 0.33 cups sugar
  • 0.33 cups creamy peanut butter
  • 2 cups thawed whipped topping (like Cool Whip)
  • 0.25 cups caramel ice cream topping plus more for drizzling on top
  • 0.25 cups melted chocolate for topping

Method
 

Preparation Steps
  1. In a mixing bowl, combine graham cracker crumbs with melted butter for the crust. Press the mixture into the bottom and up the sides of a 9-inch pie plate.
  2. Toast the pecans over medium heat for about 3 minutes, shaking frequently. Remove from heat and set aside to cool.
  3. Beat together softened cream cheese, sugar, and peanut butter until smooth.
  4. Fold in whipped topping and half of the toasted pecans.
  5. Spread caramel topping evenly over the crust.
  6. Add the cream cheese mixture over the caramel layer and refrigerate for 2-3 hours.
  7. Sprinkle remaining pecans on top of the pie.
  8. Melt chocolate in microwave in 30-second intervals, stirring until smooth. Drizzle over the pie.
  9. Drizzle additional caramel on top. Chill for 1 more hour before serving.
  10. Remove from refrigerator about 10 minutes before slicing and serving.
