  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp kosher salt
  • 12 tbsp butter chilled and grated
  • 0.5 cup boiling water
  • 1.25 cups brown rice flour
  • 0.666 cup tapioca starch
  • 0.333 cup potato starch
  • 0.333 cup white sugar
  • 2 tsp cinnamon

Method
 

Preparation Steps
  1. Preheat oven to 425°F. Place a large baking sheet covered in foil on the lowest rack in the oven.
  2. Combine sliced peaches with lemon juice, white sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Mix well and pour into a baking dish.
  3. Bake the peach filling for 10 minutes while preparing the topping.
  4. In a bowl, whisk together flour, white sugar, brown sugar, baking powder, salt, and cinnamon. Add grated butter and mix until crumbly.
  5. Add boiling water and stir just until combined with lumps of butter remaining.
  6. Drop spoonfuls of the topping over the baked peaches. Bake until golden, about 28 minutes.
  7. Serve warm or at room temperature. Enjoy!
