Preparation Steps
- Place one can of beans and 2 cups of chicken broth into a blender; blend until smooth. Add to the slow cooker.
- Add remaining ingredients: beans, broth, tomatoes, bell pepper, green chiles, cumin, chile powder, garlic and onion powders, oregano, chicken breasts, and cilantro to the slow cooker.
- Cover and cook on high for 4 hours or low for 6-8 hours.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Stir in diced scallions, remaining cilantro, and season with salt and cumin to taste.
- Serve hot, garnished with lime wedges, sliced avocado, and a dollop of sour cream if desired.
